The Hôtel de Montmorency has undergone several transformations throughout its history. In the late 18th century, it served as the residence of Gabriel Cavaillé, a former counselor at the Parliament of Toulouse. In 1803, it was acquired by Antoine Sahuc and later passed to Ferdinand Debès. A fascinating discovery was made in 1875 when a bust of Henri I de Montmorency, hidden during the revolt of Henri II de Montmorency, was unearthed within its walls.
In 1877, the hotel underwent significant restoration and expansion under the guidance of architect Viviers, commissioned by Joseph-Henri Gabriel Cavaillé and Célestin Cavaillé. The interior decor, largely dating from this period, adds to the building's allure and historical significance.
In 1908, part of the hotel was sold to Achille Gaillard, and by 1921, it was fully transferred to Auguste Cavaillé. The building saw further restoration between 1939 and 1952, ensuring its preservation for future generations. In recognition of its historical and architectural value, the Hôtel de Montmorency was designated as a historic monument in 2011.
