The hotel, then known as Hotel Döring, featured an annex with large arched windows on the ground floor, rounded corner windows on the first floor, and dormer windows on the top floor. This annex included a tower with its own entrance, additional windows to the north, and a northern wing with more arched windows. A hand-drawn sketch from 1869 shows that this five-bay northern wing was the original concert hall.
Hotel Döring was a popular venue for local clubs and associations. The Bitterfeld Aviation Club occasionally met here, and in 1932, the 42nd National Congress of the Saale Chess Federation was held at the hotel from October 5th to 10th.
In 1949, the hotel was renamed Hotel Central. However, a major fire on February 19, 1969, severely damaged the dance hall, parts of the restaurant, and the mirror hall, leading to their permanent closure. During the 1960s, the hotel became part of the HO (Handelsorganisation) chain. As a result, only three bays of the northern and northwestern sections, including the corner tower, survived. The ground floor windows were modified, and a restaurant, which also uses the corner tower, has been operating in this space for many years. In 1991, a family of restaurateurs from Quellendorf acquired the hotel and continued to run it under its existing name. Since then, the hotel has undergone at least one renovation.
Due to its long and varied construction history, Hotel Central does not adhere to a single architectural style. While most of the building dates back to the 1920s, the hotel features a mix of design elements. The majority of the windows have rounded corners, creating a blend of basket arch and segmental arch shapes. The southern facade facing Robert-Schumann-Platz is divided into four sections: a tower on the left, two window bays with a shared shop window and dormer, a central risalit with three bays (one of which houses the hotel entrance), and three additional bays on the right that are not replicated on the ground or top floors.
The vertical structure of the building is accentuated by plastered wall projections that resemble rustication. The eastern side of the hotel has simpler windows without rounded corners. Hotel Central is a protected architectural monument and is listed in the monument register with the number 094 17638. The building's current form is most closely associated with the modern style, particularly the Heimatstil (homeland style) architecture.
Today, Hotel Central offers a blend of historical charm and modern amenities. The hotel features 11 single rooms and 14 double rooms, providing a comfortable and welcoming stay for guests. Additionally, there is a conference room available for meetings and events. Although the original fountain to the east of the hotel and the water features to the south are no longer present, the hotel remains a picturesque and inviting destination.
